Chuck Spanbauer

Before Chuck Spanbauer became a chef, he spent twenty years in printing and regional food publishing — a career that put him in close contact with the culinary world long before he took it up professionally. When he sold his business in 2000, he founded Your Guest Chef with a clear philosophy: that the private table, when done right, is the finest dining experience there is.

Chuck's cooking was shaped early. His grandmother — a Frenchwoman born and raised in South Carolina — was his first and most influential teacher. In her kitchen, he learned that the French love of technique and the Southern love of generosity were not in conflict. They were the same impulse, differently expressed.

That philosophy has guided every engagement since. Whether he's preparing a seven-course dinner for eight or a wedding reception for three hundred, Chuck approaches each event as an act of hospitality — unhurried, considered, and specific to the people and occasion it serves.

He sources ingredients deliberately: from local producers, the Downtown Appleton Farmers' Market, and carefully selected specialty vendors across the Fox Valley and Green Bay. Fine china, crystal, and silver are part of the experience he brings — because the table itself is part of the meal.
